Which Cuban Hot Sauce Goes With What

All five Barbaro Mojo sauces start from the same mojo criollo idea: citrus, garlic and Cuban spices behind the pepper. Any of them works on most things. But each one has dishes where it stops being good and starts being the right answer. This is that chart.

Cooking with it and finishing with it are different jobs

This is the part most pairing charts leave out. Jalabáo and Piñazo hold up when they are stirred into a pot and simmered. Their flavor is built on peppers and aromatics that survive heat. El Havanero and Matanza are better added at the end, off the heat, where the habanero and Carolina Reaper stay bright instead of flattening into generic warmth.

If you are making a Cuban dish from scratch, the sauce usually goes in twice: a spoonful early for depth, a few drops at the table for the top note.

Start with Jalabáo. It is built on the same mojo criollo base as the food itself, so it adds heat without fighting the citrus and garlic already in the dish. For beef dishes like ropa vieja and picadillo, El Havanero is the better match.

Which hot sauce is best for pork?

Jalabáo and El Havanero, depending on how much heat you want. Both work on lechón, masitas, and pulled pork. Piñazo is also very good on pork, where the pineapple plays the role the sour orange already plays in the marinade.

Both, with different sauces. Jalabáo and Piñazo can be cooked into a dish. El Havanero and Matanza are better added at the end, since long cooking dulls habanero and Carolina Reaper heat into something flatter.
