Why These Numbers Look Lower Than You Expect
A Carolina Reaper measures over 1.6 million Scoville units. Matanza contains Carolina Reaper and measures 6,500. Both numbers are correct, and the gap between them is the single most misunderstood thing about hot sauce heat.
The reason is simple: a sauce is not a pepper. What is in the bottle is mostly mojo criollo, onions, tomato, garlic, and citrus, with peppers cooked into it. The measurement describes the thing you actually pour on your food.
Most Scoville figures you see attached to hot sauces describe the pepper variety instead. That number is larger and easier to market, but it does not tell you how hot the bottle is. We are publishing the bottle.
What Measures High, and Why
Sauces that post very large Scoville figures usually get there with capsaicin extract, a concentrated additive rather than a cooked pepper. Extract delivers heat without flavor, which is why extract-forward sauces tend to taste sharp or chemical.
Barbaro Mojo uses whole peppers. That caps the ceiling and it is a deliberate trade: the sauce has to taste like something after the heat arrives.
The gap between advertised and measured is not a small one. When the Hot Ones Season 25 lineup was lab tested by HPLC, several sauces measured a fraction of their published figures: The Last Dab Xperience advertises 2,693,000 SHU and measured 64,100. Another advertised 17,000 and measured 480. Those are not typos, and they are not unusual.
Measured Heat vs How It Feels
The numbers do not always match the experience, and the clearest example is in our own lineup.
Best Day Ever measures 4,470 SHU. El Havanero measures 5,170. By the numbers El Havanero is hotter. Most people report the opposite, because Best Day Ever carries a small amount of Carolina Reaper, and Reaper heat builds slowly and sits on the finish. El Havanero is straight habanero: it arrives fast and clears.
Peak capsaicin is measurable. Duration is not. Both are real.

How This Relates to Our 1–10 Scale
The 1 to 10 numbers on our labels and product pages are the Barbaro Mojo Cuban heat scale, a house scale for comparing our own sauces to each other. It is not Scoville, and it was never meant to be.
The house scale follows the lab order exactly, with one deliberate exception: Best Day Ever sits at 8 and El Havanero at 9, matching the measurements, even though the Reaper finish on Best Day Ever makes it feel hotter to many people. Because a sauce is not a pepper. A Carolina Reaper measures well over a million Scoville units on its own, but in a finished bottle it is a small share of a recipe that is mostly mojo criollo base, onions, tomato, and citrus. Most Scoville figures published by hot sauce brands describe the pepper variety rather than the product, which is why they look dramatically higher.
How were the Scoville numbers measured?
By HPLC, high performance liquid chromatography, at Southwest Bio-Labs in Las Cruces, New Mexico. Samples were submitted in September 2024. HPLC measures capsaicinoid content directly and converts it to Scoville units, which is more precise than the original taste-panel method Wilbur Scoville used in 1912.
What does SHU mean?
SHU stands for Scoville Heat Units, the standard measure of chili pepper pungency. Higher numbers mean more capsaicin. A bell pepper is 0, a jalapeno is roughly 2,500 to 8,000, and a Carolina Reaper averages over 1.6 million.
Do you use pepper extract?
No. The heat comes from whole peppers cooked into the sauce. Extract-based sauces can post very high Scoville figures because they are chemically concentrated capsaicin, which is a different product category from a sauce you pour on food.
